1 medium clove garlic
salt to taste
3 tablespoons tahini
3 tablespoons lemon juice
Pinch of ground cumin
2 tablespoons toasted sesame seeds
Peel garlic and chop finely. Sprinle with salt then used the flat side of a knife to scrape and mash the garlic into a paste. Transfer to a small bowl and whisk in tahini. Whisk in lemon juice; at first it will thicken, but as you add more it will loosen. Once all the lemon juice is added, whisk in water 1/2 tablespoon at a time until you reach creamy, saucy consistnecy.
Drizzle over vegetables and sprinkle with sesame seeds.
Serve with green beans, potatoes, carrots, broccoli, or cauliflower.
