2 cups flour
1 teaspoon salt
1 teaspoon baking soda
2 cups buttermilk
3 eggs, separated
confectioner’s sugar (for dusting)
Optional: fruit preserves or cheese for filling
Sift together flour, salt, and baking soda.
Add buttermilk and egg yolks to flour mixture and blend.
Beat egg whites until light and fluffy, forming soft peaks. Gently fold egg whites into batter.
Heat aebleskiver pan over medium heat. Grease each cup with a little cooking spray and fill 2/3 full with batter. Cook approximately 1 – 1 1/2 minutes until golden brown on bottom, then flip using a tooth pick or corn prong.
Cook other side for 1 – 1 1/2 minutes as well.
Remove and sprinkle with powdered sugar.
Optional: fill each cup only 1/3 full with batter, place a small amount of fruit or cheese inside, then top with additional batter so that cups are 2/3 full.
