2 cups flour
3/4 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon allspice
1 cup coarsely chopped walnuts or pecans (optional)
3/4 cup mini chocolate chips (optional)
3 very ripe, darkly speckled, large bananas, well mashed (about 1 1/2 cups)
1/2 cup vanilla yogurt
2 large eggs, lightly beaten
6 tablespoons melted butter
2 teaspoons vanilla extract
Preheat oven to 325. Grease a 9×5 loaf pan and set aside.
Stir flour, sugar, baking soda, salt, cinnamon, allspice, nutmeg, nuts, and chocolate chips together in a large bowl and set aside.
In a medium bowl, mix the bananas, yogurt, eggs, butter, and vanilla together. Lightly fold banana mixture into dry ingredients until just combined and batter looks thick and chunky. Spoon the batter into the loaf pan and smooth the surface with a spatula.
Bake at 325 until loaf is golden brown and a toothpick inserted in the center comes out clean, about 70-75 minuts.
Cool in pan about 5 minutes then turn out and let cool on a wire rack.
