Roast Cornish Hens

For spice rub, combine to make 4 teaspoons:
coarse flake salt
tellicherry black pepper
sugar
turmeric
minced orange peel
coriander

2 16-18 ounce cornish hens
1 tablespoon vegetable oil
1 tablespoon butter


Heat oven to 375. Wash hens and pat dry. Coat each hen with vegetable oil, then season with rub. Top with small pieces of butter. Place hens in a roasting pan with a rack in oven for 15 minutes, then reduce heat to 325 and cook until the skin is crisply golden and the meat is done, 45-60 minutes depending on size. Occasionally baste hens with pan juices throughout cooking.
