Balti Seasoning Blend (and Sauce)

Balti Seasoning: coriander, garlic, ginger, cumin, dundicut chilies, Ceylon cinnamon, brown mustard seeds, cardamom, clove, fennel, fenugreek, charnushka, ajwain, star anise, black cardamom, cilantro, anise seed and bay leaf

For sauce:
4 TB water
2 TB Balti
1/4 tsp garlic
3 TB oil
large minced onion
2 Cups chopped tomatoes
2 TB lime juice
2 cups chicken stock

For sauce, add water to Balti and garlic. Fry in 3 oil with onion 1 minute. Add tomatoes, lime juice, and stock. Simmer 20 minutes until thick. Serve over rice plain or mix with cooked meet.
