40-Cloves-of-Garlic Soup

40 cloves of garlic, peeled
1 1/2 cups vegetable stock
19 ounce can of white beans
2 tablespoons lemon juice
1/2 teaspoon thyme
salt and pepper to taste
dash of parsley
dry sherry to taste

Simmer first five ingredients until garlic is soft.
Puree soup in food processor.
Add remaining ingredients to taste.
