3 sticks unsalted butter
1 3/4 c sugar
2 large eggs, lightly beaten
3 c sifted all-purpose flour
1 1/2 c unsweetened cocoa powder
1/4 t salt
1 T freshly ground black pepper
1/2 t cayenne pepper
1 t ground cinnamon
Cream butter & sugar. Add eggs and beat until fluffy. Sift together dry ingredients. Add to butter mixture and beat until well mixed. Shape into a flattened round and refrigerate at least 1 hour.
Preheat over to 350. and line baking sheets with parchment.
Roll out chunks of dough between pieces on plastic wrap to about 1/8″ thickness. Cut into shapes and bake for 10-12 minutes. Cool on racks.
Decorate with royal icing.
