Fragrant Couscous Pilaf

2 cups water
2/3 cup dates
1/3 cup chopped dried apricots
1 teaspoon ground cardamom
1/2 teaspoon ground Saigon cinnamon
1/4 teaspoon ginger
10 ounces couscous
1/3 cup slivered toasted almond


Combine water and spices in medium saucepan. Cover and bring to a boil. Add couscous, cover, and remove from heat. Let stand 5 minutes. Add almonds and serve immediately.
