Fried Plantains with Nutmeg and Rum

Ripe plantains
oil, or combination of oil and butter for shallow frying
salt and pepper
nutmeg
fresh lime
rum (dark or spiced)


Cut plantains in half crosswise and peel. Slice each half lengthwise into 1/4 inch thick slices.

Heat oil in skillet over medium heat Saute plantains until golden on both sides, about 4 minutes per side, sprinkling sides with salt, pepper, and nutmeg.

When plantains are almost done, squeeze a little lime juice and rum. Serve hot.
