Vichyssoise

8 leeks
1 medium onion
1 quart chicken broth
8 potatoes
2 teaspoons butter


Slightly brown leeks and onion in butter. Add cheicken broth and sliced potatoes, bring to boil and cook for 35 minutes. Salt and pepper to taste. When cooked, put in blender or thru food mill. Chill thoroughly and add cup of cream. Sprinkle chopped chives on each serving.
