Ginger Cranberry Compote

1 750ml bottle Zinfandel* wine
3/4 tbsp grated orange peel
2 c. organic sugar or evaporated cane juice
3/4 c. fresh squeezed orange juice
1/3 cup chopped The Ginger PeopleĀ® Crystallized Ginger
1 cinnamon stick
1 vanilla bean, split
1/2 tsp kosher salt
2 12oz packages fresh organic cranberries

Combine all ingredients, except cranberries, in a saucepan. Bring to a boil, stirring frequently to dissolve sugar. Lower heat and simmer until volume is reduced by half. Add cranberries. Continue to simmer until berries darken in color and burst. Remove from heat. Stir gently to combine. Remove cinnamon stick and vanilla bean. Let stand at room temperature until cool. Cover and refrigerate overnight to allow flavors to blend. Makes 6 cups. *Tip: Only cook with wine you would drink.
