5 potatoes, cooked and mashed
1 onion, finely diced
2 cloves garlic, crushed
1 carrot, diced (optional)
1/2 lb peas
1 green hot pepper, cut into thin strips
1 (1-in) piece fresh ginger, grated
1 teaspoon cumin
1 teaspoon garam masala
1/2 teaspoon ground coriander
1/2 teaspoon ground cardamom seeds
1/2 teaspoon turmeric
1/2 bunch cilantro, finely chopped
3 tablespoons sunflower oil
Heat oil in a skillet over medium heat and pour the onion and ginger.
Sauté for 2 minutes until the onion is soft, then add the garlic.
Sauté for a minute.
Add peas, hot pepper and carrot and cook on low heat for 5 minutes.
Finally, add the mashed potatoes and the other ingredients.
Mix well and cook over low heat, covered for 5 minutes.
