Coconut Katsu Chicken

2 boneless chicken breasts pounded to 1/2 inch thickness
1/4 cup flour
2 eggs beaten
2 cups coconut panko
Oil for frying

Put flour, eggs, and panko in three separate bowls.

Coat each chicken breast with flour, then egg, then panko.

Deep fry in 350 degree oil until golden and internal temperature is at least 165.
