Millennium Dal

2 cups red lentils OR 2 cups green lentils,
OR 1 cup green lentils and one cup soaked mung beans
6 cups water
2 teaspoons turmeric
2 teaspoons salt
2 teaspoons cumin
2 teaspoons garam masala
2 teaspoons cayenne
2 teaspoons coriander
2 stock cubes
2 tablespoons lemon juice


Simmer lentils in water and turmeric until lentils are tender, 20-40 minutes (or more if using a mung bean combination)
Combine all other spices in small bowl, add spice mixture, lemon juice and stock cubes to dal
Stir gently until stock cubes are dissolved

Serve over basmati rice with Sriracha and coriander chutney on the side
