Penne with Bean, Tomato and Feta Sauce

1/4 cup olive oil
1 large garlic clove, finely chopped
1 can black beans, rinsed and drained well
1 pound fresh, ripe tomatoes, seeded and diced
Grated zest of 1 large lime
1-2 teaspoons Tabasco sauce
1/2 teaspoon dried oregano
1 teaspoon ground cumin
1/2 teaspoon salt (or to taste)
1/4 cup fresh chopped cilanto
1 cup (4 oz) crumbled feta
8 oz. pasta*

Combine olive oil, garlic, black beans, tomatoes, lime zest, Tabasco sauce, oregano, cumin and salt in heatproof bowl
Start pasta* in large pot
Place bowl over boiling pasta to warm
When pasta is al dente, drain well and toss with sauce
Add cilantro and toss again
Toss again with feta and serve immediately

*Recommended pasta – farfalle, malfalda, orchette, wheels or shells
