Pralines

2 cups granulated sugar
1 cup brown sugar
1 cup evaporated milk
2 tablespoons dark corn syrup
1 stick butter
1 teaspoon vanilla
2 cups pecans


Mix sugars, evaporated milk and corn syrup in cook over double boiler, stirring frequently, to soft ball stage (240 degrees)
Remove from heat and add butter and vanilla, beat with wooden spoon until shine is gone and mixture is cool
Before mixture becomes too thick, add the pecans
Mix well and drop by spoonfuls onto waxed paper

Makes 3-4 dozen

Variation: Instead of vanilla, try adding rum, chocolate, maple or coconut extracts
