1 cup good quality mayonnaise
1 small clove garlic, roughly chopped
1 cup mixed herbs (parsley, basil, cilantro)
1 green onion, roughly chopped
juice from one lemon
1 teaspoon Dijon mustard
1 teaspoon olive oil
Tabasco sauce to taste
Salt and pepper to taste
Combine mayonnaise, garlic, herbs, and green onion in small food processor or blender. Blend until herbs are well chopped.
Season to taste with lemon juice, Dijon mustard, olive oil, Tabasco, and salt and pepper.
Chill until ready to use.
This aioli is easy to make because it begins with a base of mayonnaise rather than eggs.
