Grilled Vegetables en Papillote

8 small leeks
4 medium zucchini, ends removed
8 medium tomatoes
2 tablespoons basil
? cup apple cider
salt and pepper

Trim the green tops and roots from the leeks. Split lengthwise and rinse.
Quarter each zucchini lengthwise.
Blanch, peel and seed tomatoes, then quarter them.
Divide vegetables among 4 12-inch squares of aluminum and sprinkle each with basil and cider.
Fold foil and crimp edges. Place packets on grill and cook 15 minutes. Season with salt and pepper before serving.

Also OK in the coals of a fire. Good camping option ? just skip peeling the tomatoes.
