Red Beans and Rice

1 ? pounds dried red beans, sorted and soaked
vegetable stock to cover
1 onion
4-6 clove garlic
1 red pepper
1 green pepper
1 jalapeno pepper
1 28 oz can diced tomatoes
5-6 bay leaves
cayenne pepper to taste
salt and pepper to taste
Tabasco sauce

Begin simmering beans in stock. Water that the beans were soaked or boiled in may be used as a base for the stock.
Saute onion, garlic, and peppers in olive oil until soft.
Add tomatoes and onion mixture to beans.
Add seasonings to taste.
Simmer for at least an hour.

Serve over long grained white rice or brown rice.
