Stuffed Tomatoes with Feta and Olives

4 large firm tomatoes
1 1/2 cup sourdough breadcrumbs
1/4 cup shallots, minced
1 teaspoon garlic, minced
1/4 cup fresh basil, minced
1/4 cup feta cheese
1/4 cup olive oil
1/4 cup parmesan cheese

Preheat oven to 375 degrees
Cut tomatoes in 1/2 and scoop out pulp.
Place upside down to drain
For stuffing, combine all ingredients except parmesan
Spoon into tomatoes and place in baking dish, sprinkle with parmesan
Bake about 10 minutes until tomatoes are warm
