Vinaigrettes: Red Wine

1/4 cup red wine vinegar
1 tablespoon Dijon mustard
1 tablespoon honey
1/4 teaspoon crushed garlic
Salt and freshly ground pepper, to taste
1/3 cup extra-virgin olive oil

Combine all ingredients in shaker. Shake until emulsified.
Adjust seasonings as needed.

Variation: add fresh herbs or replace garlic with shallots.
