2 cloves garlic, minced
1 teaspoon oregano
1 teaspoon chopped basil
salt and pepper
2 medium squash, cut into 1-inch pieces
2 medium green bell peppers, seeded and cut into 1 inch squares
16 cherry tomatoes
Combines oil, garlic, herbs, salt and pepper.
Alternating the vegetables, thread them on to 8 skewers, beginning and ending each with a mushroom.
Brush with oil mixture.
Grill about 5 minutes per side, turning and basting frequently, until vegetables are tender.
