Hollandaise Sauce

1/2 cup margarine or butter
3 beaten egg yolks
1 tablespoon water
1 tablespoon lemon juice
dash of salt and white pepper


Cut margarine into thirds, bring to room temperature
In top of double boiler, combine egg yolks, water, lemon juice, pepper and salt
Add one piece of margarine, place over boiling water and cook, stirring rapidly
Add butter one piece at a time, cook until thickened, 1-2 minutes, stirring constantly
