Mediterranean Herb and Rice Salad

3 tablespoons olive oil
2 tablespoons red wine vinegar or balsamic vinegar
1 teaspoon Dijon style mustard
1/4 cup chopped fresh mint leaves of 1 /12 tablespoon dried
1 teaspoon dried thyme leaves
1/2 teaspoon ground black pepper
4 cups cooked long grain white rice or brown rice
2 tomatoes, diced
3-4 scallions, chopped
2 cloves garlic, minced
1 cup pitted medium black olives, sliced
1 15 oz can chickpeas, drained
2-3 oz crumbled feta cheese

Whisk together oil, vinegar, mustard, herbs and black pepper, set aside
In separate bowl, combine rice, tomatoes, scallions, cucumber, garlic and black olives
Blend in vinegar, chick peas and feta
Chill 1 hour
