3 tablespoons butter (sweet butter is best)
8 large sea scallops
1 leek, cleaned, trimmed and diced
1/4 cup vodka
salt and pepper to taste
Heat 2 tablespoons butter in saute pan until sizzling.
Add scallops and saute until almost thoroughly cooked. Remove from heat.
Add leeks to butter and saute until softened, about 3-4 minutes.
Add vodka and return scallops to pan. Cook until vodka is reduced.
Add remaining butter.
Season with salt and pepper to taste.
