Seven-Vegetable Couscous

1 package (about 2 cups) couscous
1 teaspoon turmeric
2 medium onions, chopped
1 cup finely shredded cabbage
1 medium potato, peeled and diced
1 medium zucchini, chopped in 1/4″ pieces
1 can garbanzo beans
1 large tomato, peeled and diced
1 tsp freshly grated ginger root
1/2 tsp each: ground cumin,
coriander, turmeric
vegetable stock, as needed

Prepare couscous according to package.
Saute onions until tender in soup pot.
Add remaining ingredients except stock.
Cover and reduce heat to low. Cook, stirring occasionally, for 15 to 20 min. Add stock as needed to produce a moist, but not soupy stew.
Serve over couscous
