4 medium plum tomatoes, diced
1 small red bel pepper, coarsely choppped
1/4 cup fresh basil leaves
2 tablespoons olive oil
2 tablespoons red wine vinegar
1/2 teaspoon black pepper
1/4 teaspoon salt
About 1 pound cod or halibut steaks
Heat grill and spray with cooking spray.
Put tomatoes in a non-reactive bowl. In a food processor, chop bell pepper, scallions, and basil. Transfer to bowl with tomatoes and stir in oil, vinegar, pepper, and salt. Strain excess liquid into a bowl and brush onto cod steaks.
Grill steaks 4 minutes per side, brushing with additional liquid as needed. Transfer to platter and top with relish.
