Thai Sweet and Sour Cucumber Salad

1/2 cup white vinegar
1/2 cup water
1/2 cup sugar
1 teaspoons salt
1 large cucumber
1/4 cup chopped red onion
1/3 cup finely chopped, salted, dry-roasted peanuts
3 tablespoons chopped fresh cilantro

In a small saucepan, over medium heat, combine vinegar, water, sugar, and salt and bring to boil, stirring occastionally to dissolve sugar and salt. Let cool to room temperature.

Peel cucumber and quarter it lenghwishe, then cut into triangles about 1/4 inch thick.

In a blow, combine cucumber, cooled vinegar mixture, onion, cilantro, and serve well. Top with peanuts before serving.
