2 tablespoons olive oil
1 onion chopped
1 garlic clove, crushed
1 small caulflower, broken into florets
1 teaspoon cumin seeds
pinch of ground ginger
4 tomatoes, peeled, seeded, and quartered
3/4 cup water
2 tablespoons lemon jice
salt and pepper to taste
cilantro, to serve
Heat oil in casserole. Add onions and garlic and stir fry 2-3 minutes until the onion is soft. Add caulflower and stir fry for 2-3 minutes more until cauliflower is flecked with brown.
Add cumin and ginger and fry briskly for 1 minute, then add tomatoes, water, and salt and pepper. Bring to boil, then reduce heat, cover (foil or a place is fine), and simmer 6-7 minutes or until cauliflower is tender.
Stir in lemon juice and adjust seasonings. Garnish with cilantro to serve.
