2/3 cup sake, rice wine, or dry sherry
2 tablespoons light soy sauce
2 teaspoons sugar
1 tablespoon Chinese white rice vinegar or cider vinegar
1/3 teaspoon salt
2 tablespoons finely chopped scallions
Place all ingredients except scallions in a small pan and simmer for about 5 minutes. Allow to cool thoroughly. Combine the cooled marinade and the whole mushrooms and let them marinate overnight.
Drain mushrooms and sprinkle with scallions to serve.
