Mediterranean Clay Pot Vegetables

2 zucchini, sliced thin
4 large tomatoes, peeled and quartered
1 tablespoon olive oil
1 medium eggplant, diced
2 large green peppers, sliced
2 large onions, sliced
1 clove garlic, mashed
salt and pepper to taste
oregano and rosemary to taste
2 tabelspoons parsley
1 cup white wine


Combine all vegetables and place in clay pot. Pour wine over vegetables. Cover.

Put in cold oven and bake at 425 for 60 minutes.
