Spiced Blackberry and Apple Crumble

butter to grease dish
1 pound tart cooking apples
1 cup blackberries
grated rind and juice of 1 orange
1/4 cup soft light brown sugar

topping:
1/2 cups all purpose flour
6 tablespoons butter
1/3 cup superfine sugar
1/4 cup chopped hazelnuts
1/2 teaspoon crushed cardamom


Heat oven to 400. Generously butter a 5 cup baking dish.

Peel and core apples then slice them into the dish. Level the surface, then sprinkle blackberries over. Sprinkle the orange rind and light brown sugar over the top, then pour over the orange juice. Set aside.

Sift flour into a large bowl and rub in the butter until the mixture resembles course crumbs. Stir in sugar, hazelnuts, and cardamom, then sprinkle the topping over the top of the fruit.

Press the topping around the edges of dish to seal in jiuces. Bake for 35-35 minutes, or until crumble is golden.

Variations: Try using plums, apricots, peaches, or pairs, alone or in combination swith apples. Rhubarb and bananas will work as well.
