Caribbean Spice Rub and Salsa

For Spice Rub:

1 tablespoon dark brown sugar
2 teaspoons ground coriander
2 teaspoons ground cumin
1 1/2 teaspoons garlic powder
1 teaspoon salt
3/4 teaspoon ground ginger
1/2 teaspoon ground turmeric

For salsa:

1/2 – 3/4 medium sized fresh pineapple, cut into small dice (2 cups)
4 large radishes, cut into small dice (3/4 cup)
1/2 medium orange or yellow belle pepper, cut into small dice (2/3 cup)
3 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice, more to taste
1/4 teaspoon each salt and pepper, more to taste

For spice rub, combine all ingredients and use to season fish.

For salsa, combine all ingredients. Let stand while fish cooks. Adjust seasonings and serve.
