1 large or two small cucumbers, peeled, cut in half and seeded
1 clove garlic, peeled
1/4 teaspoon salt
1/2 cup plain, low fat yogurt
2 tablespoons chopped fresh mint
ground black pepper to taste

Coarsely grate cucumbers and gently squeeze by hand to remove excess liquid, set aside
Chop garlic coarsely and sprinkle with salt, using side of knife, work salted garlic to a paste
Whisk together garlic paste, yogurt and mint, stir in reserved cucumbers, season with salt and pepper to taste.
