Cauliflower Gratin

1 medium cauliflower, cut into bite-sized pieces
1 teaspoon salt
2 tablespoons butter
3 tablespoons flour
1 1/2 cups milk
1 cup grated cheddar cheese
dash cayenne pepper
tablespoons bread crumbs


Boil cauliflower in salt water until tender or steam and salt
Melt butter in saucepan, stir in flour slowly and add milk
Stir in 3/4 cup of cheese and cayenne pepper
Cook over low heat until thickened
Place cauliflower in casserole
Pour sauce over cauliflower
Sprinkle with remaining cheese and breadcrumbs
Place in oven at 400 degrees for 10-15 minutes and under broiler for additional five until breadcrumbs are brown and cheese is bubbly
