Spicy Tamarind Shrimp

1 tablespoon canola oil
5 cloves garlic, minced
2 shallots, minced
3 chilies (Thai or jalapeno), sliced thin
2 tablespoons fish sauce
4 tablespoons palm sugar
1 pound shrimp
salt to taste
1 lime
1/2 cup cilantro, chopped
3 tablespoons crispy Thai garlic

Place oil in a large saucepan on medium-high heat. Add garlic and shallot and sweat until translucent, about 5 minutes. Add the chilies and cook for another 2 minutes. Add the fish sauce, palm sugar, and tamarind paste and cook for 2 minutes, until the sugar has dissolved and all of the garlic and shallots are caramelized by the space.

Add the shrimp and mix thoroughly, making sure to coat all shrimp. Cook on medium heat for 5 minutes until all the shrimp are cooked through.

Season with salt and lime. Top with chopped cilantro and crispy garlic and serve immediately as is or over rice.
