Thai Pork and Green Beans (Pad Prik Khing)

3-4 cloves garlic, chopped
1 Tablespoon prik khing paste
1/2 cup pork, sliced thinly
2 cups green beans, cut into 1-2″ pieces
1/2 cup water
3-4 kaffir lime leaves, sliced thinly
1 red jalapeno pepper, sliced
1 teaspoon fish sauce

Heat a teaspoon of oil over medium high heat. Add the garlic and saute until almost golden brown. Then add the prik king chili paste, mix with the garlic, and saute for a few seconds longer.

Next add the pork slices, coat with the chili paste, and let them cook until they are done. If the pan gets too dry while the pork is cooking, add some water, a few tablespoons at a time.

Add the green beans and some more water, again a little at a time, until they are almost cooked.

Add the kaffir lime leaves and red pepper at this point. Taste and adjust the seasonings as needed. You may need to add about a teaspoon of fish sauce. Some recipes also call for sugar, so feel free to add a teaspoon or so if you think it needs it.
Once the green beans are fully cooked, take off the heat, serve, and enjoy!
