1/2 tbsp chili flakes
1 Tbsp roasted rice
1/2 tbsp fish sauce
2 tbsp lime juice
2 finely chopped coriander stalks (with leaf)
2 teaspoons of palm sugar
Add the 2 tbsp of lime juice, 1 1/2 tbsp of fish sauce and 2 teaspoons of palm sugar to a small bowl and stir thoroughly with a spoon until the palm sugar is mixed in.
When the sugar has been thoroughly mixed, add the 1/2 tbsp of chilli flakes, 1 tbsp of roasted rice, and the 2 chopped coriander stalks, and stir thoroughly. (To make roasted rice simply add uncooked rice to a sauce pan and fry on a high heat without oil until the rice is golden brown. Then crush in a food processor for about 30 seconds.)
Serve with your chosen meat – goes particularly well with grilled pork and grilled chicken.
