Nam Prik Oong (Tomato and Pork Nam Prik)

10 fresh red chiles
2 tbs finely chopped red onion
1 tsp salt
4 small tomatoes, quartered and gently seeded
1 to 2 tbs vegetable oil
1 ts minced garlic
1/2 cup ground pork
1 tsp sugar
2 tbs Nam Pla (fish sauce)

Seed the chiles and put them in a mortar, add the onion and salt, then pound until the mixture turns into a paste (or blend in a food processor) to make gaeng som paste. Put the tomatoes into the mortar with the chile paste and pound to incorporate or use a food processor.

Heat the oil in a small wok or saucepan, add the garlic and fry until it begins to brown, add the paste and fry until the aromas are released, then add the pork, sugar and fish sauce. Stir-fry until the pork is cooked
