Cambodian Beef Salad (Plea Sach Ko)

100 grams of beef, thinly sliced
2 tablespoons of lime juice
1 teaspoon minced lemongrass
1 clove garlic, minced
1 shallot, minced
1 tablespoon fish sauce
1 teaspoon of sugar
15 grams of basil
15 grams of saw leaf
20 grams of bean sprouts
30 grams of long beans
2 tablespoons of roasted peanuts
3 bird’s eye chilis, thinly sliced

Place beef in a bowl. Add lime juice, lemongrass, garlic, and shallot. Mix well and let marinate for 5 minutes. Drain, squeezing liquid out of beef.

Fry in a hot pan, and set aside to cool.

Put fish sauce and sugar in a bowl and stir until sugar is dissolved.

Add beef to all the vegetables and herbs, toss with dressing, an stop with peanuts and chilies.
