Doctored Up Boxed Stuffing

2 6-ounce boxes chicken flavor boxed stuffing
6 tbsp butter
2 honey crisp apples, peeled and diced
1 onion, diced
1 tbsp fresh thyme leaves
Black pepper, to taste
2 1/2 cups hot chicken broth/stock
1/2 cup scallions, mostly green tops, chopped

Melt the butter.

Add apples and onion and cook over medium heat for about 10 minutes, until they are soft.

Add thyme and pepper to taste. You do not need salt because there is so much in the mix.

Add both packages of stuffing mix and stir to coat well with butter mixture.

Transfer to a greased baking dish. Sprinkle scallions over. Pour over broth so that it is super moist—not like mashed potatoes, but very moist.

Level out top with spatula and bake at 375 for 30-35 minutes.

Reader additions: celery, cranberries, walnuts, sausage, bacon, and bacon grease.
