Sri Lankan Cucumber Salad

1 small English cucumber, peeled and thinly sliced
Salt
About ? cup thinly sliced shallots
1 green cayenne chile, finely chopped
1 red cayenne chile, finely chopped
1/2 teaspoon fine sea salt
1/2 teaspoon freshly ground black pepper
2 tablespoons rice vinegar or fresh lime juice
2 tablespoons canned or fresh coconut milk

Place the cucumber slices in a colander, sprinkle on 1 tablespoon salt, and set aside for 30 minutes. Rinse and gently squeeze dry.

Place the cucumber in a shallow bowl, add the shallots, chiles, sea salt, and black pepper and toss. Pour the vinegar or lime juice and coconut milk over, toss gently, and serve.”
